There are as many meatloafs as there are cooks. This is my favorite, a simple meatloaf recipe that can be varied to your liking. Start with the basic recipe and add spices from the list below to suit your family. You can vary the meat used and the seasoning.
To keep my meatloaf recipe simple, I use meatloaf. Many chefs use a combination of cold beef, ground pork or cold veal. Some use sausages in their mix. If you want a mixture of meat, use 1/2 to 3/4 pounds of pork, veal or sausage for 1 kilo of beef. Use the Italian-style seasoned bread crumbs to season the meatloaf, making this recipe easy and quick to prepare. In fact, I don't even measure anything. I just dump the ingredients together with a fair amount of each. If the mixture is too moist, add more bread crumbs. If you are too dry, add more ketchup. It really is a simple meatloaf recipe that is foolproof.
Basic Easy Meat Loaf Recipe
1 1/2 pound mark chuck
3/4 cup Italian bread crumbs
1 large onion, finely chopped
1 1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon each garlic powder and onion powder, optional
1/4 cup catsup + more for top if desired
2 tablespoons Worcestershire sauce, optional but good
1. Preheat oven to 375 degrees F.
2. Mix all ingredients in a large glue pan or ovenproof baking dish.
3. Mold into glue mold.
4. Bake at 375 for one hour or until done.
5. I like to cover the top with more cats during the last 20 minutes of baking.
You can try additional spices like diced paprika, chopped celery leaves, chopped parsley and thyme. If using sausage, try adding finely diced apple and eliminating garlic, onion powder and Worcestershire sauce. Small diced vegetables such as potatoes, carrots or peas can be added if desired. Some chefs add chopped olives or chopped pickles or hard-boiled eggs. You can substitute canned soup for the cat and pour more over the top when baking. The variations are endless.
If you are blessed with the remnants of this light meatloaf recipe, it will be a delicious sandwich to fill the day after, but don't count on it. My family eats this.
